Porridge is one of our favourite ways to start the day. But it doesn't have to be beige. This very special recipe by Niki Webster for overnight oats really packs a triple whammy of flavour, colour and goodness.
Niki, founder of Rebel Recipes explains: “As a breakfast obsessive, I think it’s a little sad that it sometimes doesn’t get the attention it deserves. Why not start your day with something amazing and vibrant instead of a limp piece of toast? Haskapa adds an incredible colour but it also packs a nutritional punch - absolutely perfect to add to breakfast dishes.

Ingredients
100g oats
250ml coconut milk drink
1/2 tsp cinnamon
1 tsp vanilla essence/powder
1 tbsp maple syrup (optional)
2 tsp Haspaka berry powder
2 tbsp coconut yogurt
20g coconut flakes
Extra milk to loosen oats (if needed)
Directions
To make the oats:
Add the oats, milk and spices and maple to a tub and mix to combine and cover.
Pop in the fridge overnight.
To toast the coconut:
Add the coconut flakes to a saucepan, heat on medium until lightly toasted then set aside.
In the morning:
Stir the berry powder into oats then top with the coconut flakes, coconut yogurt and a little more coconut drink if needed.
