Ingredients

½ cup fresh goat cheese, softened at room temperature (optional)

2 tbsp Haskapa powder

½ tsp honey

4 tbsp olive oil

2 tbsp apple cider vinegar

3 tbsp water

1 tsp coarse salt
Directions
Combine all ingredients in a small deep bowl, and whisk vigorously until emulsified. Makes about a cup and a half of dressing, and can keep in the fridge for up to two weeks. Serve over salad, like charred radicchio, cool cooked beets, beet sprouts, thin red onion and pistachios.
